• Melon and cucumber gazpacho with crab yoghurt
• Roasted cod with garlic, individual röesti potatoes and broad bean salad.
• Clotted cream and raspberry ripple ice cream in a brandy snap basket

• Thai fragrant mussels
• Sirloin steak with pink peppercorn butter, dauphinoise with smoked garlic and wilted spinach

WINTER/SPRING DAY/EVENING CLASS COURSES

These are five week courses. Classes are held in central Winchester over five consecutive Wednesdays.

These courses are designed to cover a broad range of skills and focus on recipes that are suitable for informal, easy entertaining and simple-to-prepare suppers. Each person will cook three recipes each class.

All you need to bring is an apron and lots of containers in which to transport your creations home. Everything else will be provided.

Evening Class Course

Weds, 14th January to 11th February, 6pm-8.30pm and

Weds, 22nd April to 20th May, 6pm to 8.30pm

• Lebanese chicken with preserved lemons and bulghar wheat
• Herbed pitta sticks with babaganoush (aubergine dip)
• Beef 'stroganoff' with perfect mashed potato, spinach with garlic and cream
• Lemon drizzle cake
• Smoked haddock and prawn kedgeree
• French glazed apple tart
• Cinnamon ice cream
• Balsamic pear, St Agur and watercress salad
• Chilli beef ramen (a noodle soup with lots of fresh flavours)
• Lemongrass and chilli crème caramel
• Baked goats cheese, beetroot and rocket salad
• Bacon and sweetcorn chowder

Five Week Skills Course (daytime)

Weds, 25th February to 25th March, 10am-12.30pm

Week one: knife skills, white sauce method, egg whites
• Spiced butternut squash and carrot soup
• Twice baked Rosary goats cheese and thyme soufflés

Week two: shortcrust pastry, red meat, pan sauces
• Shortcrust pastry flan case for week three
• Sirloin steak with brandy and mustard sauce
• Pommes anna (a finely sliced layered potato dish to test your new knife skills!)

Week three: egg cookery, poultry, green vegetables
• Leek, bacon and parmesan flan
• Chicken breast stuffed with sundried tomato tapenade
• French beans

Week four: fish cookery, casseroles
• Lamb rogan josh - start, finish week 5
• Grilled salmon with stem ginger and orange
• Spiced couscous

Week five: bread, rice, pulses - delicious curry!
• Finish lamb rogan josh
• Pilau rice
• Naan bread with onion seeds and coriander
• Dahl (lentils)

The cost of each five week courses is £195 per person


ONE TO ONE TUITION

£50 per hour (minimum 2 hour lesson, 3 hours usually recommended) - this includes all ingredients. (Travel costs may be charged in addition if the lesson is to be held outside a 10 mile radius from Alresford.)
