Courses

Our courses are open to everyone, no previous knowledge expected or required.

Our courses will help you to:

•  improve your knife skill
•  pick up some shortcuts and tips of the trade
•  learn how to organise your time effectively
and see what advance preparation can be done
•  get advice on planning menus and presenting your finished product beautifully
•  discover which wines go with which foods
•  find out which produce is in season and where to obtain specialist ingredients – supplier information will be available on each course
•  learn how to adjust recipes to make them healthier
•  know how to vary recipes so that you can use the same basic techniques but with different combinations of flavours
•  know how to choose and store produce correctly

Seasonal Cookery Days

The aim of the day is to create a delicious three course lunch with your own fair hands – well, mostly. We have done most of the hard work for you beforehand by obtaining the ingredients and weighing them all out for you! We also pair you up and try to work together as there is usually a lot to fit in. This doesn’t mean you miss out on practising the skills yourself, you take it in turns and share the tasks so that everyone gets a chance to do everything (anyone that doesn’t share nicely gets to wash up everyone else’s stuff, joking of course).

The day starts with a demonstration of the main techniques and discussion of the recipes, then you do all the hard work and we aim to let you have a rest and eat your creations after a couple of hours cooking.

As you serve up your starter we crack open a bottle of wine which has been carefully chosen to match the food (wine and advice supplied by the Naked Grape wine shop in Alresford), and often we have the added pleasure of the company of Simon Evans (co-owner of The Naked Grape) who will wax lyrical about the wine.

Workshops

Lots of you have pleaded for special attention to be given to particular trouble spots or no-go zones in your cookery repertoires, (or you just want to spend a day making your favourite things which is fair enough really). The workshops are designed to improve your skills in specific areas such as:

•  sauces
•  canapés
•  cakes
•  fish
•  pasta and sauces to go with it
•  biscuits and bakery
•  healthy eating
•  pastry
•  world cookery eg Thai, Indian, Moroccan etc
•  freezer cooking (you will go home with either 2 portions of 4 different dishes, or you can pay more to do 4 portions of 4 dishes)

The day includes a light lunch and you just need to bring lots of containers to transport your creations home and an apron, everything else will be provided.

Evening Class Course

This is a five week course, one evening per week. The course is designed to cover a broad range of skills and focuses on recipes that are suitable for informal easy entertaining and simple to prepare suppers. 

We know that family and work commitments can mean that time is at a premium, so spending hours browsing through food magazines, making comprehensive shopping lists and then locating the ingredients can be a bit of a luxury. 

What we need is a batch of recipes that don’t have millions of ingredients (so that you stand more of a chance remembering some of them when you have forgotten your shopping list), that don’t take hours to prepare, and that you can use as a blueprint for copious variations. That is exactly what you will get if you do an evening class course.

Each person cooks enough for two so that the food can be taken home and either devoured by others or frozen for another time. Just bring an apron and containers to transport your food home in, everything else is provided.
